There’s no better way for mom to wake up on Mother’s Day than with a delicious Breakfast (in bed) Quesadilla, made with all natural Sargento® Deli Style Sliced Reduced Fat Medium Cheddar Cheese. Oh, and flowers. Don’t forget the flowers.

- 2 eggs
- 2 egg whites
- 1 green onion, thinly sliced or 1/4 cup chopped chives
- 1/4 cup salsa
- 4 slices Sargento® Deli Style Sliced Reduced Fat Medium Cheddar Cheese, diagonally cut in half
- 2 (6 to 7-inch) whole wheat tortillas
Beat together eggs, egg whites, green onion and salsa.
Heat a large nonstick skillet over medium heat. Add egg mixture; cook, stirring frequently, until eggs are soft set. Arrange cheese over tortillas. Spoon eggs over cheese; fold tortillas in half over filling.
Cook quesadillas in skillet over medium heat 3 minutes per side or until heated through and cheese is melted. Serve with additional salsa if desired.
- Sargento Shredded Reduced Fat 4 Cheese Mexican may be used instead.
