Cheddar Jack, Mango & Avocado Quesadillas
INGREDIENTS
- 8 (6-inch) flour or corn tortillas
- 1 Tbsp. canola or vegetable oil
- 8 slices Sargento® Natural Blends™ Deli Style Sliced Sharp Cheddar-Jack Cheese
- 1 small ripe mango or papaya, peeled, seeded, thinly sliced
- 1 ripe avocado, peeled, seeded, sliced
- 1/4 cup chopped cilantro
- 3/4 tsp. ground cumin or chili powder
- 1/2 cup chipotle or jalapeño salsa
DIRECTIONS

Brush 1 side of tortillas lightly with oil; place 4 tortillas, oiled sides down, on large baking sheet. Top with 4 slices cheese.

Layer mango, avocado and cilantro over tortillas; top with remaining slices of cheese. Place remaining 4 tortillas, oiled sides up, on top; sprinkle with cumin.

Bake in preheated 450°F oven 6 to 7 minutes or until golden brown and cheese is melted. Cut each quesadilla into quarters; serve with salsa.
