INGREDIENTS
- 2 tsp. canola or vegetable oil
- 1/2 cup thinly sliced onion
- 1 cup red and/or green bell pepper strips
- 4 fully cooked chicken sausage links (9 to 12 oz. per package of four)
- 4 (6-inch) French bread sandwich rolls or submarine rolls, split, lightly toasted
- 1 cup (4 oz.) Sargento® Fancy Shredded Reduced Fat Colby-Jack Cheese
DIRECTIONS

Heat oil in a large skillet over medium heat. Add onion and bell pepper. Cook, stirring occasionally, 4 minutes. Push vegetables to edges of skillet; add sausage. Cook 5 to 6 minutes or until sausage is browned and heated through and vegetables are tender, turning sausage and stirring vegetables occasionally.

Fill rolls with sausage and vegetables; top with cheese. Serve with mustard if desired.
