Mexican Roast Beef Salad Supreme
INGREDIENTS
- 8 cups torn romaine lettuce leaves
- 2 cups (8 oz.) Sargento® Artisan Blends® Shredded Authentic Mexican Cheese, divided
- 1 slice (1/2-inch thick) deli rare roast beef (8 oz.), cut into cubes
- 2 cups yellow or red cherry tomatoes
- 1 ripe avocado, peeled, seeded, diced
- 1/3 cup chipotle or jalapeño salsa
- 1/4 cup mayonnaise
- 1/4 cup chopped cilantro
DIRECTIONS

Combine lettuce, 1-3/4 cups cheese, roast beef, tomatoes and avocado in a very large bowl.

In a small bowl, combine salsa, mayonnaise and cilantro; mix well. Add dressing to salad; toss well and transfer to 4 serving plates. Top with remaining cheese.
